With over 43,000 Facebook followers and a Facebook group boasting over 19,000 members, Aini Amin’s blog Fun Cooking is a sweet success! Despite her obvious culinary talents, this September Aini enrolled on to Warrington & Vale Royal College’s Patisserie & Confectionary Certificate Level 2. Here’s why.
“From when I was a young girl I was always involved in preparing meals for the family,” says Aini. “My mother loved to be in the kitchen and I inherited her passion for cooking. I started watching YouTube cooking videos and then began making my own recipes.”
Originally from Pakistan, most of the recipes featured on Aini’s highly commended blog are Pakistani or Indian, yet eager to develop new skills and hungry for a challenge, Aini enrolled on to the college’s Patisserie & Confectionary course. “I love baking cakes for my friends and family and sharing my creations on my blog,” said Aini, “but I wanted to practice professional techniques. The course tutor is brilliant. Yesterday, we made sticky toffee pudding and it was by far the best I’ve ever tasted!”
Thirty-five-year-old Aini started her blog over four years ago with the help of her husband who works as a web developer. Aini explained: “My friends and family encouraged me to share my recipes, so my husband – who has been incredibly supportive – built me a website and later bought me a DSLR camera to capture photographs of my food. I also attended a Digital Photography course at the college.
“Despite sharing my recipes daily, there wasn’t much engagement for the first eight months, then suddenly my Facebook followers jumped up to 20,000 and my blog began to receive an increasing number of views.”
As well as managing Fun Cooking, being a part-time student and devoted wife, Aini also has two young children. When asked how she found the time to ‘fit everything in’, Aini commented: “Don’t ask! I’m always running here and there. Quality time with my children is very important but once they are in bed I take what I call ‘me time’ and devote this to my blog.”
Testament to Aini’s hard work and dedication, Fun Cooking was nominated in 2016 and 2017’s UK Blog Awards and has been nominated a third time for 2018.
Aini dreams of managing her own restaurant or becoming a chef lecturer, however she assures us that her loving family, Fun Cooking and its dedicated followers will always take priority.
One-pan black pepper chops
Check out this easy-peasy, one-pan black pepper chops recipe from Aini’s Fun Cooking:
Lamb Chops 500 g
Garlic finely chopped 2 cloves
Salt 1/4 tsp or as required
Oil 2-3 tbsp
Hoisin sauce 1 tbsp
Siracha hot sauce 2 tbsp
Freshly crushed black pepper 1/2 tsp
- In a pan add chops, oil and garlic chopped. Turn on the heat.
- Stir and cook on high heat for 5 minutes.
- Now add 1/2 cup water and salt, cook on low heat with lid on until chops are tender almost 30 minutes.
- When chops are nicely tender, turn the heat high and cook it until all extra water evaporates. After that add siracha sauce, black pepper, hoisin sauce.
- Stir well and turn off the heat immediately.
- Serve with Italian salad or any salad of your choice.
